Your guide picks you up in Ho Chi Minh City early in the morning for the 3.5-hour drive southwest into the Mekong Delta. The landscape shifts gradually from city sprawl to endless green - paddy fields stretching flat to the horizon, punctuated by sugar palms and low wooden houses on stilts above the waterline.

After checking in at your riverside hotel in Can Tho, the afternoon belongs to the Hau River. You board a traditional wooden boat and set off along one of the delta's widest channels, where the pace of daily life plays out openly on the water.

A 5:30 AM wake-up is entirely worth it. By the time your boat reaches Cai Rang, the floating market is already in full swing - dozens of wooden vessels loaded high with dragon fruit, pineapples, watermelons, and leafy greens, their bows hung with a sample of whatever they are selling so buyers can spot the cargo from a distance. Wholesale traders call out across the water, transactions happen boat-to-boat, and small skiffs dart between the larger vessels selling coffee and banh mi to keep the traders fuelled through the early hours.

After breakfast, your group heads by boat to Vinh Long, where the river splits into a patchwork of islands covered in orchards and garden plots. A short cruise here reveals a slower, less-visited side of the delta - small jetties serving island villages, elderly farmers carrying panniers of vegetables to morning markets, and the muted colours of an early southern morning still settling into the day.
